For a truly special and memorable weekend, be sure to mark your calendars to join Crystalwood Lodge for our 2005 Vintner's Dinners. These celebrations feature local wineries and exquisite pairings of culinary delights and fine wines. Each multi-course gourmet dinner is designed specifically around the wines being showcased, and the Vintners will be joining us to provide insights not normally available about their wines and wine-making process.
As always, guests are welcome to come early to enjoy the grounds and surrounding area, and are invited to make it a complete weekend by staying the night and truly immersing themselves in the experience. Each Vintner's highlighted wines will be offered for tasting as well as used to prepare the multi-course feast. Dinner is $55-$75/pp including all wines and is by reservation only. Dining at Crystalwood Lodge, located between Crater Lake and Klamath Falls in Southern Oregon is an experience you will not soon forget. Open year-round, the Lodge specializes in plentiful mouth watering meals and personalized service, whether for a luncheon, brunch or gourmet dinner. For example....conjure up a hearty appetite and then imagine yourself immersed in the fine dining experience which awaits you for dinner:
Arrive in the late afternoon to stroll the grounds with a glass of wine from a local area winery and enjoy watching the sand hill cranes, neotropical songbirds, Canada geese and Bald eagles of the Upper Klamath National Wildlife Refuge on the adjoining marsh, count the beaver in Crystal Spring or watch the otters surface to see what is going on in the spring channel. Then witness one of nature's incredible sunsets from either the spacious open deck or the upper screened viewing porch.
Enjoy scrumptious hors d'ouvres in the cozy great room with your friends or guests in front of a pleasant wood fire. Enter the dining room to be served with perfectly prepared gourmet dinners, complimented if you wish, by the ideal wine choice.
Main courses may consist of specially prepared salmon, lamb, poultry, pork or beef accompanied by a rice, potato or pasta medley and fresh, crisp garden vegetables. And as always, each meal is served with our own fresh made rolls.
Be sure to save room for a great dessert. A luscious chocolate suicide cake with berry sauce or fresh made pecan pie with whipped creme, together with a dessert wine if you like, makes a great ending for a great meal. Complete the evening with a cup of Uncommon Grounds coffee or one of our extensive selection of teas and a stroll on the deck or grounds to enjoy the stars.
Overnight guests can enjoy a relaxing time in our hot tub under the stars and retire to their comfortable rooms to dream of their evening and another Crystalwood Lodge dinner. They will awake in the morning to smells of fresh bacon and muffins and enjoy a relaxing breakfast either on the open deck or in the dining room before returning to their lives which await them outside the sanctuary known as Crystalwood Lodge.

Hors d'ouvres: Artichoke Hearts Stuffed with Bay Shrimp & Topped with Hollandaise Sauce
First course: Cream of French Onion Soup
Main course: Cedar Salmon with Basil Aioli, Rice Pilaf, Steamed Asparagus Spears
Dessert: Crème Brûlé, served with Uncommon Grounds coffee or a selection of fine black and herbal teas.
Luncheons and brunches feature the same exquisite dining and personal service, and depending on the season and guest needs a variety of lighter fare such as pasta and shrimp salad, delectable quiches, and homemade soups. Our luncheon and brunch guests are welcome to bring their fly rods to try their fishing luck in our stocked trout ponds or in Crystal Springs, or spend a couple of extra hours touring Crystal Creek with one of our canoes available for guest use.

Dining Guidelines and Reservation Policy:
Dining is a casual and friendly experience at Crystalwood Lodge, where the emphasis is personal service and sated appetites. Advance reservations of at least 48 hours are strongly suggested for non-staying guests to ensure we have the freshness, quality and quantity of food and service on hand to fully accommodate your meal. When you make your reservations, please be sure to let the staff member know of any dietary requirements, restrictions, requests or preferences. Our chef designs the menus around guest requests and he delights in preparing your favorite dish, one more way in which Crystalwood Lodge focuses on personal service.
There is no formal dress code for meals at the lodge, although a shirt and footwear are required. Casual dress is required for all meals served in the dining room. Appropriate comfortable attire suggested for meals on the outside deck. The lodge dining areas are entirely non-smoking, however the lodge does maintain a designated smoking area on our wrap-around deck overlooking the front meadow.

Prices:
Standard prices for luncheon/brunch range from $15 - $25 per person, depending on the menu, service arrangements and other requirements. Dinner prices start at $35 per adult for most meals, with special requests and some entrees slightly higher. Prices are all-inclusive, with dinner prices including a complimentary micro-brew or glass of our house wine, and all meals including hors d'ouvres, first course, entrée, dessert and coffee/tea/soda. Children ages 4-15 are half-price, and 3 and under free of charge. Special arrangements can be made for food service for children in the party (favorites like macaroni and cheese, pizza, hamburgers, etc.) We can provide a special cake or dessert on request to complete that special occasion, so please inquire when you discuss your needs with our staff.

Recipe of the month:
Cedar Salmon
1 - Cedar Plank - soaked in water for 24 hours
2 - 7oz Salmon filets
Preheat grill to medium high heat. Place salmon filets on greased cedar plank, season salmon with fresh ground pepper & salt. Put the cedar plank with the salmon over the open flames of the grill. Grill on medium high for 20-25 minutes or until salmon reaches 140 degrees. Serve with your favorite sauce.
